Steak strips with pepper sauce

    canned green peppercorns, crushed

    French mustard

    thick cream

    rump steak, 25 mm thick
  • salt and freshly ground green peppercorns


Prepare the sauce by blending all the ingredients well. Boil for about 5 minutes till the sauce has thickened. Stir occasionally. 1 . Score the fatty sides of the meat at 25-mm intervals to prevent the meat from curling while cooking. 2. Heat a griddle pan till smoking hot and grill the meat for 5-7 minutes on each side for underdone or 7-10 minutes on each side for medium. Remove from the griddle pan and leave for 10 minutes before slicing against the grain into thin strips. 3. Season the meat strips with salt and pepper and thread onto cocktail sticks or thin bamboo sticks to create a concertina effect. Serve with the pepper sauce. Makes about 20 strips.
