Star anise and soy chicken with noodles

Ingredients (15)

1.3 kg chicken — free-range
MARINADE:
1/4 cup sweet soy sauce
1/4 cup soy sauce — light
3 Tbs brown sugar
3 star anise
1 Tbs sherry — dry
1 garlic — cloves, crushed
1 tsp fresh ginger — finely grated
sea salt and freshly ground black pepper
NOODLES:
300 g noodles — cooked
1 spring onions, finely chopped
120 g mangetout — blanched, thinly sliced
1/4 cup peanut oil
1/4 cup orange juice
1 Tbs fresh ginger — finely grated

Method:

Combine the marinade ingredients in a small pot, bring to the boil and simmer just until the sugar has dissolved. Season.

Using a pair of kitchen scissors, cut the chicken down the back bone and into two halves.

Rub the marinade onto chicken and marinade for four hours or overnight.

Preheat the oven to 200°C and cook the chicken for 45 minutes on each side. Leave to rest for a few minutes.

In the meantime, toss the noodles with the other ingredients. Divide the chicken into portions and serve with the noodles. Alternatively, shred the chicken and serve on top of the noodles.
