Spud surprise

  • 4
    medium-sized potatoes
  • 170
    tuna in brine, drained
  • 250
    low-fat chunky cottage cheese
  • 2
    small ripe tomatoes, coarsely chopped
  • 1
    apple, coarsely chopped
  • 30
    low-fat mayonnaise
  • salt and freshly ground black pepper

Scrub the potatoes well and prick with a fork. Arrange on a plate and cover with plastic wrap. Pierce the plastic wrap. Place the potatoes in the microwave and microwave on HIGH (100 percent power) until completely soft and cooked. Mix all the ingredients for the tuna filling. Season with salt and freshly ground black pepper. Cut a cross on top of the cooked potatoes and press gently to open up. Spoon the filling on top and serve.
