Springbok fillets with stir-fried vegetables

Ingredients (7)

STIR-FRIED VEGETABLES
80.00 g pumpkin — cubed
20.00 sugar snap peas
4.00 spring onions — chopped
1.00 red pepper — sliced
fresh chillies — 573
2.00 red chilli
4.00 springbok — fillet

Method:

Stir-fry the vegetables together with the chillies in a little oil until soft but still firm. Remove the chillies. Season to taste with salt and pepper. Grill the springbok fillets on the griddle plate of a gas cooker or in a cast-iron griddle pan on top of the stove. The fillets can also be braaied over open coals until done, preferably rare. Divide three-quarters of the vegetables between four plates. Slice the fillets diagonally and place on the vegetables. Place the remaining vegetables over the fillet and top with the pan juices if desired.
Serves 4.
