Spring salad

  • 1
    head of lettuce, rinsed and patted dry
  • few endive leaves, finely sliced
  • pumpkin seeds
  • 200
    olive oil
  • 45
    orange juice
  • salt and black pepper to taste


Break the lettuce into bite-sized pieces and arrange on a salad platter. Scatter the endive leaves and pumpkin seeds on top. To make the salad dressing, whisk the olive oil and orange juice together with a wire whisk and season to taste with salt and freshly ground black pepper. Drizzle over the salad just before serving and mix lightly. Serve with the pasta.
