Spring pasta

  • olive oil for frying
  • 2
    cloves garlic, crushed
  • 2
    leeks, very well washed and sliced
  • 4
    spring onions, chopped
  • 125
    ml
    chicken stock
  • 45
    ml
    white wine
  • 5
    ml
    sugar
  • 6
    baby marrows, sliced
  • 30
    ml
    readymade pesto
  • 400

    spinach, stalks discarded, shredded
  • salt
  • milled black pepper
  • 500

    spaghetti, cooked according to packet directions
  • 150

    feta cheese
 

Method

 
Heat olive oil in a frying pan and fry garlic for 1 to 2 minutes. Add leeks, spring onions, chicken stock (use 1 cube), wine and sugar. Simmer, uncovered, until liquid has reduced slightly. Add baby marrows and pesto and cook for a few minutes. Add spinach and toss for a minute. Season and pour over hot cooked spaghetti. Sprinkle crumbled feta cheese over and serve.
