Spinach parcels (Meang khum)

  • small heap of finely chopped onion
  • small heap of finely chopped lemon
  • small heap of finely chopped chillies
  • small heap of finely coarsely chopped lemon grass
  • small heap of finely coarsely chopped ginger
  • small heap of finely coarsely chopped peanuts
  • small heap toasted coconut
  • 15
    tamarind sauce
  • 5
    brown sugar
  • pinch salt
  • small fresh spinach leaves, rinsed to serve


Spoon small amounts of all the ingredients in separate heaps on a plate. To make the sauce, mix all the ingredients and place in the centre of the plate. Each guest can now assemble his or her own parcel. Fold the spinach leaves into cones and fill with a little of all the ingredients, depending on your taste. Moisten with a little of the sauce, pop the entire cone into your mouth and wait for the wonderful fresh, fragrant flavours to fill your palate.
