Ingredients (8)

500.00 g flour — wholewheat
2.00 ml salt
2.00 ml freshly ground black pepper
50.00 ml fresh coriander — chopped
350.00 ml water
10.00 ml cumin — seeds
16.00 spinach — trimmed
butter — melted

Method:

1 Sift flour with salt and pepper. Add coriander and enough water to form a soft dough. Knead lightly for about 10 minutes, cover with a damp towel and leave to rest for 3 hours.
2 Knead in the cumin seeds until evenly distributed and divide dough into 8 equal balls. Roll each ball out into a 1 cm-thick round. Place 2 spinach leaves on each and fold over the dough. Roll out into 1 cm-thick circles again.
3 Place the parathas on a hot grill or fry in a saucepan with melted butter for 4 to 5 minutes, turning once. Serve spread with melted butter to accompany curry.

Preparation time: 50 minutes, plus resting time
Cooking time: 10 minutes
