Ingredients (4)

2.00 spinach
cream sauce: cake flour
250.00 ml milk
15.00 ml butter — melted
250.00 ml cream

Method:

1. Cook the spinach in boiling salted
water for 10 minutes.
Drain in a colander, leave to cool and cut up finely. Place in a serving dish.

2. Cream sauce Put the flour into a bowl
and make a well in the centre.
Season
with salt and freshly ground black pepper.

3. Slowly add the milk and butter, stirring with a wooden spoon.

4. Transfer to a saucepan and cook over
a medium heat, stirring continuously with
a wooden spoon, until it starts to bubble.
Add the cream, stir, then pour the sauce over the spinach. Using two spoons, mix the sauce into the spinach.
