Ingredients (16)

250.00 ml flour — wholewheat
250.00 ml cheddar cheese
125.00 ml butter
250.00 g bacon — rindless, chopped
15.00 ml butter — salted
150.00 g baby spinach — washed
150.00 g feta cheese — crumbled
3.00 eggs
250.00 ml milk
125.00 ml sour cream
15.00 ml lemon juice
60.00 ml parmesan cheese — grated
3.00 ml mustard — powder
3.00 ml salt
0.00 freshly ground black pepper — to taste
2.00 ml dried mixed herbs

Method:

Pre-heat oven to 160 °C.
For the pastry:
1. Mix all ingredients to a soft pastry in a food processor.
2. Press into base and sides of a 24cm rectangular quiche dish.
For filling:
3. Fry bacon until crisp. Remove and keep aside.
4. Add butter to pan, then add spinach and fry until wilted. Spoon bacon and spinach onto base. Sprinkle feta cheese over spinach layer.
5. Beat eggs, milk, sour cream and lemon juice together. Add Parmesan cheese, mustard powder seasoning, and mixed dried herbs pour onto base.
6.Bake for 45 minutes.
