Spinach bake

    bunches (300 g each) spinach, hard stems removed

    eggs, hard-boiled (optional)

    onion, finely chopped

    large ripe tomatoes, skinned

    Cheddar cheese, grated

    fresh breadcrumbs

Preheat the oven to 180 ºC (350 ºF). Shred the spinach and boil in a little water until soft. Drain thoroughly. Return the spinach to the saucepan and season to taste with salt and pepper. Pour over the cream. Simmer until the mixture is creamy and turn into an ovenproof dish. Shell the eggs if using, and slice. Arrange on top of the spinach. Sauté the onion in a little oil until soft. Dice the tomatoes and add. Simmer until the mixture is no longer watery. Season with salt and pepper and spoon over the eggs. Combine the cheese and breadcrumbs and sprinkle on top. Bake for about 20 minutes or until the cheese has melted and the topping is lightly browned. Serves 4-6.
