Spinach, apple and walnut salad

    bunch young spinach leaves (stems removed) rinsed and shredded
  • 8
    butter lettuce leaves, rinsed
  • 2
    apples, sliced and dipped in lemon juice
  • 1
    red pepper, first dipped in boiling water, then in cold water, and sliced into rings
  • 12
    pecan nuts, lightly fried
  • 60
    bean sprouts
  • 60
    feta cheese, crumbled


Arrange the shredded spinach on a pretty salad platter. Arrange the butter lettuce leaves, apple slices and pepper rings on the spinach. Sprinkle with the pecan nuts, bean sprouts and feta cheese. If desired, serve the salad with a low-fat salad dressing. Serves 4
