Spinach and feta triangles

    onion, finely chopped

    bunches fresh spinach (stems removed), finely chopped

    feta cheese, crumbled
  • 125
    ricotta or smooth cottage cheese

    egg yolk
  • nutmeg
  • salt and pepper to taste

    phyllo pastry
  • melted butter

Preheat the oven to ,190 ºC (375 ºF) . Grease a few baking sheets. Sauté the onion in a little oil until tender. Boil the spinach until tender in a little water, drain well and mix with the onion. Add the feta cheese, ricotta and egg and egg yolk (whisked together). Season with a pinch of nutmeg and salt and pepper and mix. Brush a sheet of phyllo pastry with melted butter and place another sheet on top. Cut into four long strips. Place a spoonful of the mixture at the bottom of a strip of pastry, fold the bottom corner over the filling to cover and continue folding to make a triangle. Repeat with the remaining ingredients. Place on the baking sheet, brush each triangle with melted butter and bake for about 15 minutes or until golden brown.
