Ingredients (13)

500.00 g pasta — spinach and carrot noodle twists
100.00 g apricots — dried, sliced
1.00 lettuce — chicory
3.00 carrots — julienned
1.00 green pepper — cubed
100.00 g cashew nuts — roasted
25.00 ml fresh coriander — chopped
200.00 g cheddar cheese — white, cubed
DRESSING
30.00 ml vinegar — white wine
20.00 ml mustard
90.00 ml fresh chillies — 573
15.00 ml fresh coriander — chopped
sea salt and freshly ground black pepper

Method:

Prepare the pasta according to pack instructions and set aside to cool.
Toss all ingredients together with the pasta and drizzle with the dressing. Garnish with fresh coriander sprigs.
DRESSING: Place the vinegar and mustard in a small bowl. Whisk in the oil gradually. Add the chopped coriander and season with salt and freshly ground black pepper.
Mix well before serving.
