Ingredients (10)

20.00 prawns — cooked, shelled
2.00 avocados — ripe, peeled, stoned and cut into cubes
1.00 cucumber — English variety, shavings
20.00 fresh mint — sprigs
MARINADE
2.00 garlic — cloves, crushed
30.00 ml sugar
30.00 ml lime juice
60.00 ml vinegar — rice
60.00 ml fish sauce
3.00 fresh chillies — chopped

Method:

MARINADE: Mix all ingredients. Toss prawns and avocado cubes in mixture and marinate for 2 hours.
Spear a prawn and a ripple of cucumber on avocado pieces with a cocktail stick, decorate with mint and spoon a little marinade over.
