Spicy potato wraps

  • oil
  • 4
    cooked potatoes, thickly sliced
  • 7
    Cajun spice (or use 5 ml coriander, 2 ml cumin and 2 ml cayenne pepper)
  • 5
    cumin seeds
  • 20
    sesame seeds
  • 0.50
    onion, chopped
  • 0.50
    avocado, roughly chopped
  • 1
    tomato, finely chopped
  • salt and pepper
  • lemon juice
  • 4


Heat the oil in a pan.
Roll the potato in the spices and seeds and stir-fry in oil until crisp on the outside.
Mix the onion, avocado and tomato.
Season with salt, pepper and lemon juice.
Divide among the tortillas, spoon the salad on top and roll up.
Serve with sour cream or mayonnaise, sweet chilli sauce and fresh coriander.
