Ingredients (16)

250.00 g bacon — rindless, diced
45.00 ml oil
1.00 onion — chopped
1.00 garlic — cloves, crushed
125.00 ml fresh ginger — grated
500.00 g pork mince
5.00 ml sambal oelek
15.00 ml soy sauce
45.00 ml thai curry paste
1.00 stock cube — chicken
250.00 ml water
5.00 ml salt
5.00 ml freshly ground black pepper
125.00 ml coconut cream
30.00 ml fresh parsley — chopped
250.00 ml cashew nuts — roasted

Method:

Method:
1. Add bacon to pan and cook until crisp. Remove and keep warm.

2. Add oil to pan and sauté onion, garlic and ginger until soft. Add mince and cook, stirring, until meat is browned.

3. Stir in sambal oelek or Worcerstershire sauce, soy sauce, curry paste, crumbled stock cube and water.

4. Simmer gently for about 30 minutes. Add seasoning, coconut cream, parsley and cashews. Stir to mix and heat through.

5. Serve over rice.
