Ingredients (8)

250.00 ml water
250.00 ml wine — white or red
200.00 g sugar
45.00 g seedless raisins
1.00 cinnamon — stick
500.00 g plums
30.00 ml potato flour — or cornflour
100.00 ml water

Method:

Bring water, white wine, sugar, raisins and cinnamon stick to boil. Add plums and simmer over gentle heat until plums are tender.
Dissolve potato flour in cold water.
Remove pan from heat and stir in flour mixture. Return to stove and bring to boil. Remove from stove and cool.
Pour into a bowl and serve well chilled with a little thick cream.
