Spicy peppers

  • 250
    brown and wild rice mix
  • 2
    large ripe tomatoes
  • 1
    large red onion
  • 3
    cloves garlic
  • 1
    red chilli
  • handful basil
  • 2
    discs feta cheese
  • salt and milled pepper
  • 4
    red, green or yellow peppers
  • olive oil
  • 1
  • 1
    stock cube


Place the water, stock cube and rice into a pot. Bring water to the boil, reduce heat and simmer for 20 minutes.
When rice is just cooked, place in a colander and rinse well with cold water.
Mix remaining ingredients together and season to taste. Pile rice into peppers.
Place peppers on a baking tray, drizzle mixture with a liberal amount of olive oil and replace lids.
