Ingredients (10)

MARINADE
30.00 ml soy sauce
15.00 ml wine
5.00 ml dried chilli flakes
15.00 ml peanut butter
250.00 g pork fillet
5.00 ml sesame oil
10.00 ml canola oil — or sunflower oil
3.00 garlic — cloves
375.00 ml stock — hot, chicken
250.00 g noodles — family-style

Method:

Mix first four ingredients together. Place pork in a shallow dish and pour over marinade. Set aside for 30 minutes or longer if possible.
Heat oils in a pan or wok.
Add garlic and stir-fry for a minute or two.
Remove pork from marinade and toss into pan.
Stir-fry over high heat for about three minutes.

Add stock, boil quickly and remove from heat.
Drain noodles and rinse with boiling water.
Ladle hot noodles into deep bowls and top with spicy pork broth.
Top with chopped fresh mint, coriander or basil leaves.
