Ingredients (8)

500.00 ml white sugar
500.00 ml water
15.00 ml cardamom — seeds
6.00 cloves — whole
10.00 ml fennel seeds
5.00 cm fresh ginger — peeled, thinly sliced
1.00 cinnamon — stick
4.00 orange — quartered

Method:

Heat the sugar and water over low heat, stirring occasionally until the sugar has dissolved. Add the spices and bring the mixture to the boil. Simmer slowly for 5 minutes, add the orange quarters and simmer for another 45 minutes or until the orange rinds are tender – test with the back of a match. Spoon the orange quarters into hot, sterilised jars and fill each jar with syrup, Seal with sterilised lids.
Makes 750 ml of pickle.
