Ingredients (14)

1.00 lettuce — iceberg, shredded
2.00 spring onions — sliced
1.00 green pepper — thinly sliced
2.00 tomatoes — chopped
1.00 carrots — grated
30.00 g tortilla chips
SPICY MINCE
210.00 g beef mince — extra lean
1.00 garlic — cloves, crushed
5.00 ml chilli powder
2.00 ml cumin — ground
15.00 ml tomato purée
200.00 g red kidney beans — tinned, drained
15.00 ml barbecue sauce
sea salt and freshly ground black pepper

Method:

In a salad bowl, toss together all the salad ingredients, except for the tortilla chips, and chill. Heat a nonstick frying pan and dry-fry all the spicy mince ingredients for 3-5 minutes, stirring well to prevent lumps.
Top the salad ingredients with the warm mince and tortilla chips and enjoy as a main meal salad. Serves 2.
