Spicy lamb kebabs

Time 15 minutes plus standing time


  • 500
    minced lamb
  • 1
    medium onion, grated
  • 2
    garlic cloves, crushed
  • 5
    ground cumin
  • 5
    cayenne pepper
  • 1
    large egg, beaten
  • 45
  • 250
    fresh breadcrumbs
  • 20
    lemon juice
  • handful mint leaves, chopped
  • oil
  • pitas, Greek yoghurt and thinly shredded red cabbage, to serve


7-10 minutes
1. Blend together meat, onion and spices to form a paste. Season and leave to stand for one hour. 2. Combine egg, sultanas, breadcrumbs, lemon juice and mint with meat mixture. Shape into lozenges around kebab sticks or into patties. Cook under a grill or gently fry in 1 cm oil until crisp and browned. Drain on paper towel. Serve hot with pitas, red cabbage and yoghurt.
