Spicy lamb cubes with apricots

Ingredients (13)

30.00 ml fresh chillies — 573
2.00 kg lamb — cubed
sea salt and freshly ground black pepper
2.00 onion — finely chopped
2.00 garlic — cloves, crushed
5.00 cm fresh ginger — grated
2.00 cinnamon — stick
8.00 cloves — whole
6.00 cardamom — pods, crushed
10.00 ml coriander — ground
45.00 ml almonds — ground
850.00 ml stock — beef, heated
175.00 g apricots — dried

Method:

Heat the oil in a large pan. Season the meat cubes with salt and pepper and fry until brown on the outside. Remove from the pan and set aside.
Sauté; the onion, garlic and ginger until glossy. Add all the seasonings and stir-fry for another minute. Sprinkle with the ground almonds and stir.
Add the meat cubes, beef stock and dried apricots, reduce the heat and simmer until the meat is tender and the apricots are plump.
Transfer to aluminium foil containers or freezer dishes, cool, cover tightly and freeze until needed. Defrost and heat until warmed through.
Serve with rice and salad.
