Ingredients (14)

250.00 g flour — cake
5.00 ml salt
5.00 ml ginger — ground
5.00 ml cinnamon — ground
5.00 ml mixed spice — ground
5.00 ml Bicarbonate of soda
125.00 g butter
125.00 g brown sugar — soft
125.00 g black treacle
75.00 g raisins — seedless
75.00 g almonds — coarsely chopped
75.00 g ginger — preserved, chopped
2.00 eggs
300.00 ml milk

Method:

1. Sift together first 6 ingredients. Set aside.
2. Melt butter, sugar and treacle in a pan over a low heat.
3. Mix the raisins, almonds, ginger, eggs and milk into the flour and pour in the melted butter and sugar mixture. Beat until a smooth batter is formed.
4. Pour into a well greased loaf tin and bake in preheated oven at 180 ºC for 2 hours.
