Ingredients (19)

SYRUP
225.00 g sugar
1.00 vanilla — pod
5.00 star anise
12.00 coriander — seeds
3.00 ml black peppercorns — whole
3.00 cloves — whole
3.00 ml Chinese five-spice powder
25.00 g fresh ginger — peeled, julienned
2.00 lime — or lemon, zest and juice
SALAD
12.00 litchis — peeled
1.00 mango — sliced
1.00 papaya — sliced
pineapple — cubed
4.00 kumquats — fresh or preserved
1.00 melon — diced
8.00 granadillas
80.00 g blueberries
2.00 kiwi fruit
3.00 plums — stoned and sliced

Method:

1. SYRUP: Bring the sugar, 300 ml water and other syrup ingredients to the boil slowly so that the sugar dissolves. Set aside to cool and infuse. The syrup can be strained after infusing, but the spices add an exotic look the salad.
2. SALAD: Put all the fruit except the berries, kiwis and plums in a bowl. Pour over the syrup. Chill for two to three hours and add the remaining fruit just before serving.
