Ingredients (11)

60.00 ml fresh chillies — 573
120.00 g dates — dried, pitted
60.00 g apricots — dried
60.00 g almonds — whole
60.00 g cashew nuts
60.00 g macadamia nuts — halved
60.00 g pecan nuts — halved
1.00 lemon — or lime, zest only
30.00 ml fresh coriander — chopped
1.00 red chilli — deseeded and finely chopped
salt and freshly ground black pepper

Method:

Warm olive oil in a frying pan over moderate heat.
Add dates, apricots, almonds, cashews, macadamias and pecans and toss until apricots and nuts begin to colour.
Remove from heat and add lemon peel, coriander leaves and chilli.
Mix thoroughly, season to taste and serve straight from the pan.
