Ingredients (11)

30.00 ml fresh chillies — 573
350.00 g chicken breast fillets — deboned, cubed
2.00 garlic — cloves, crushed
250.00 ml tomato salsa
65.00 ml raisins — seedless
15.00 ml honey
5.00 ml cumin — ground
2.00 ml cinnamon — ground
sea salt and freshly ground black pepper
250.00 ml couscous
65.00 ml almonds — slivers, toasted

Method:

Heat the oil and sauté the chicken and garlic until lightly browned. Add the tomato salsa, raisins, honey, cumin and cinnamon and mix. Reduce the heat and simmer slowly until the chicken pieces are tender and done. Spread the couscous in a dish and pour over a cup of boiling water. Sprinkle with salt and stand for a few minutes. Loosen lightly with a fork and divide between four plates. Divide the chicken between the plates and garnish with the toasted almonds.
Serves 4.
