Spicy chicken livers

  • 500 g chicken livers
  • 45 ml oil
  • 2 garlic cloves, crushed
  • 2 medium onions, chopped
  • 10 ml chilli paste
  • 5 ml paprika
  • 5 ml cumin
  • fresh coriander leaves


Trim the chicken livers, wash and drain, then dry them between sheets of paper towel. Halve the livers if necessary.
Heat the oil in a frying pan and cook the garlic and onions until they are soft and beginning to brown.
Add the chilli, paprika and cumin and fry for a minute.
Add the chicken livers, salt and freshly ground black pepper to taste, and cook over a moderate heat to seal.
Cook until the livers feel firm, but are still pink and moist inside.
Garnish with coriander and serve hot on pasta, with a salad.
