Spicy chicken cakes

    chicken sausage
  • 50
    freshly chopped coriander
  • 2
    cloves garlic, finely chopped
  • 1
    red chilli, finely chopped
  • 500
    fresh breadcrumbs
  • 2
    large eggs, lightly beaten

    oil, for frying

    mayonnaise, to serve

Squeeze chicken meat out of the sausage casings. Add 30 ml coriander, garlic, chilli, breadcrumbs and eggs to the chicken meat. Mix together and season with salt and freshly ground black pepper. Shape into 8 equal patties and fry in heated oil for about 3-4 minutes on each side, or until golden brown. Mix together mayonnaise and remaining coriander. Serve with the chicken cakes. Serves 4.
