Ingredients (13)

30.00 ml soy sauce
10.00 ml fish paste
400.00 g beef — fillet or rump steak, sliced
200.00 g green beans — trimmed, halved
150.00 g mangetout — trimmed, halved
80.00 ml oil
30.00 ml green curry paste
125.00 g button mushrooms — sliced
125.00 ml mixed bean sprouts
60.00 ml stock — beef
20.00 ml brown sugar
50.00 ml fresh basil — torn
3.00 lime leaves — soaked, shredded

Method:

1. Mix soy sauce and fish paste together in a bowl. Add meat strips and mix to coat. Set aside to marinate for 15 minutes.
2. Bring a saucepan of water to the boil. Add the beans and mangetout and boil for 1 minute. Drain and set aside.
3. Heat oil in a wok or large saucepan until sizzling. Add meat and fry aver a high heat for 1 minute. Reduce heat, add curry paste and stir well, then add remaining ingredients, except for lime leaves, and stir-fry for 4 to 5 minutes. Top with shredded lime leaves or lemon rind to garnish and serve.
