30.00 ml oil
80.00 ml butter — melted
800.00 g beef — cubed
3.00 onion — medium, cut in 8
2.00 red chillies — chopped
2.00 garlic — cloves, crushed
5.00 ml dried thyme
20.00 ml paprika
5.00 ml coriander — ground
10.00 ml mustard powder
40.00 ml flour
750.00 ml stock — beef
400.00 g tomatoes — chopped
70.00 g tomato paste
4.00 carrots — medium, peeled and sliced
1.00 green pepper — cubed
25.00 ml sugar
0.00 sea salt and freshly ground black pepper
4.00 potatoes — peeled and cut into chips

Method:

Heat the oil and 30 ml butter in a large saucepan or casserole dish. Brown the meat in batches, then return all meat to the saucepan.
Add the onions, chillies, garlic, thyme, paprika, coriander and mustard and cook for 3 minutes. Add the flour and stir in the stock gradually.
Add the tomatoes and tomato paste and bring to the boil. Reduce the heat and allow to simmer for 45 minutes.
Add the veggies and sugar and season to taste.
Transfer the mixture to an ovenproof dish or leave in the casserole dish and top with the potato chips.
Drizzle the remaining melted butter over the chips, then bake in preheated oven (180 &degC)for 45 minutes.
