Spicy apricot pork chops

  • 4 pork loin chops or use pork fillet, cut into thick medallions
  • 2 tbsp smooth apricot jam, or use chunky, and mash it with a fork
  • 2 red chillies, chopped - most of the heat is in the seeds - remove for a milder flavour
  • 2 cloves garlic, crushed
  • juice of 1 lemon
  • olive oil
  • salt and milled pepper


Trim the fat off the chops.
Mix jams, chillies, garlic and lemon juice together.
Heat a little olive oil in a non-stick pan and seal chops on both sides.
Pour in sauce mixture and cook over a medium heat for about five minutes until the sauce goes slightly gungy and chops are done and slightly crispy around the edges.
Season and serve with quick-cook brown rice and salad or vegetables.
