Ingredients (15)

1.00 onion — sliced into rings
5.00 ml cumin — ground
5.00 ml fennel — ground
6.00 cloves — whole
1.00 piece whole cinnamon
10.00 black peppercorns — whole
700.00 g prawns
4.00 tomatoes — peeled and finely chopped
15.00 ml vinegar — white wine
10.00 ml brown sugar — soft
15.00 ml fresh coriander — optional
oil — for frying
1.00 red chilli — deseeded and finely chopped
3.00 cloves garlic — cloves, crushed
1.00 piece fresh ginger — crushed

Method:

Heat a little oil in a large frying pan and fry the chilli, garlic, ginger and saute onion until soft. Add the cumin, fennel, cloves, cinnamon and peppercorns and stir-fry for one minute. Add the prawns and stir-fry lightly. Reduce the heat and add the remaining ingredients. Simmer for a few minutes until the prawns are done and the sauce is nicely flavoured. Remove the piece of ginger before serving.
