Spiced quince ice cream

The frozen chunks of preserved quince adds a fresh crisp texture in between all that richness and creaminess.

Ingredients (8)

250 ml milk — full-fat
3 star anise
2 cinnamon — stick
250 ml cream — double thick
1 condensed milk — tin
salt — just a pinch
1 tsp vanilla — extract
350 g quince — preserved, sliced

Method:

Add the star anise and cinnamon to the milk and heat until just below boiling point.
Remove from the heat, cover and let infuse for an hour.
Remove the spices from the milk and let the milk cool in the fridge for a few hours.
In a large mixing bowl, mix the milk, condensed milk, cream, salt and vanilla extract and beat until mixed well.
Churn in your ice cream maker as per the manufacturer instructions.
Once the mixture has churned, mix in the quince pieces and freeze.
