Ingredients (9)

500.00 g sugar
1.00 lemon — zest only
1.00 lemon juice
3.00 cloves
5.00 star anise — whole
7.00 ml black peppercorns — whole
1.00 Litres water
2.00 kg plums
frozen yoghurt — low fat, to serve

Method:

Bring all the ingredients to the boil with water. Boil for about 10 minutes.
Add washed plums, reduce heat, cover and simmer until plums are soft – about 10 to 15 minutes.
Chill and serve with low fat yoghurt, frozen yoghurt and perhaps a dash of alcohol.
