Ingredients (5)

300.00 ml wine — red
125.00 g castor sugar
1.00 cinnamon — stick
1.00 orange — zest only
4.00 pears

Method:

1. Place the sugar and red wine in a shallow pan. Stir over a gentle heat until the sugar dissolves. Add the cinnamon stick and orange rind to the liquid.
2. Carefully peel the pears, but leave them whole, with stem intact. Place them in the pan with the wine and cover with a lid. Simmer for about 10 minutes.
3. Remove the lid and gently turn the pears around. Keep simmering the liquid and turning the pears, basting, until they are a deep red colour and tender, about 15 minutes. Put each pear on a plate and serve with any leftover sauce.
