Ingredients (8)

250.00 g lentils
50.00 ml oil
2.00 garlic — cloves, crushed
5.00 ml cumin — ground
5.00 ml curry powder
5.00 ml cayenne pepper
200.00 ml stock — vegetable
3.00 fresh coriander — chopped

Method:

1 Put lentils in a saucepan, cover with water and bring to the boil. Reduce heat and simmer until tender. Drain and set aside.
2 Heat oil in a large frying pan and fry garlic for 2 minutes. Add the lentils, spices and stock and season with salt. Simmer gently for 10 to 15 minutes.
3 Serve sprinkled with chopped coriander.
