Spiced lamb with melting onions

Ingredients (8)

1.00 lemon — large, quartered
2.00 onions — large, sliced
5.00 ml cumin — seeds
5.00 ml salt
60.00 ml fresh chillies — 573
450.00 g lamb — leg, cubed
basmati rice — to serve
fresh coriander — to garnish

Method:

Toss lemon quarters, onions, cumin, salt and olive oil with lamb, to coat lamb well.
Spread out evenly on a baking sheet and grill for 15 minutes, or until lamb is well charred but still pink at centre. Stir mixture as it browns.
Serve with basmati rice, garnished with coriander sprigs.
