Ingredients (15)

625.00 ml water
500.00 ml sugar
90.00 ml rooibos — tea
0.00 fresh mint
6.00 allspice — whole
4.00 star anise
2.00 cinnamon — stick
1.00 fresh ginger — chopped
10.00 cloves
3.00 lemons — zest only
3.00 lemongrass — finely chopped
45.00 ml ceylon tea
3.00 lemon — juice only
1.00 Litres apple juice
2.00 Litres water — or sparkling water

Method:

Bring all the ingredients, exept Ceylon tea, lemon juice, apple juice and water, to the boil.
Remove from the heat, add the Ceylon tea (do not stir) and infuse, covered with a lid, for no longer than 2 to 5 minutes.
Decant through a fine strainer lined with cheesecloth, onto ice cubes.
Add the lemon juice, apple juice and water.
Serve with lots of lemon slices.
