Ingredients (8)

820.00 g butter beans
3.00 garlic — cloves
5.00 ml cumin — ground
1.00 coriander — ground
1.00 lemon juice
30.00 ml yoghurt
0.00 salt and freshly ground black pepper
125.00 ml fresh chillies — 573

Method:

Place all the ingredients, except oil, in a food processor.
Process until well mixed.
Don’t panic if you don’t have a processor, use a potato masher and a fork and you’ll achieve the same thing – well, sort of.
Add the coriander and with the motor still running, slowly add the oil in a thin stream until well combined.
Adjust seasoning and serve as desired.
To serve with lamb chops, slowly heat the purée then swirl onto heated plates and top with lamb cutlets.
