Spiced beef fillet

  • 2
    beef fillet
  • olive oil
  • 15
    ground cumin
  • 15
    ground coriander
  • 3
    cloves garlic, crushed
  • 7
    dried chilli flakes
  • salt and milled pepper


Preheat oven to 200 °C.
Tie the beef fillet with string to keep its shape - not critical, but it does make for a neater result.
Rub fillet with a little olive oil.
Mix remaining ingredients together and lay on a flat surface.
Roll fillet in spices to coat evenly.
Heat a large, non-stick pan over a high heat.
Add a splash of oil and sear fillet on all sides to brown.
Transfer meat to a baking dish and pop into the oven.
Roast for 25 to 30 minutes for rare or longer as desired.
Remove from oven, cover with foil and allow to rest for 10 minutes before carving.
