Ingredients (10)

720.00 g flour — cake
12.00 ml Baking powder
10.00 ml cinnamon — ground
15.00 ml mixed spice — ground
salt — just a pinch
250.00 g honey — or golden syrup
400.00 g sugar
60.00 g butter — or hard margarine
60.00 ml lemon juice
1.00 eggs — extra-large

Method:

Grease one or more straight-sided baking sheet(s). Sift together flour, baking powder, spices and salt and set aside.
Heat honey, sugar and butter in a large saucepan. Bring to the boil, stirring until sugar is dissolved and butter is melted. Remove from heat, stir in lemon juice and allow to cool to room temperature. Beat in a third of the flour mixture, then stir in the egg. Beat in the remaining flour mixture to make a stiff dough.
Flour your hands lightly and knead until dough is smooth, pliable and still slightly sticky. If too moist to handle, add a little more flour. Press dough on the baking sheet as evenly as possible. A floured spatula or the back of a wooden spoon helps to give a smooth finish.
Bake in a preheated oven at 160 ºC for about 35 minutes, or until firm and golden brown. Allow to cool for a few minutes, then cut out shapes using a pastry cutter or sharp knife. Place on a cooling rack until completely cooled. Store in an airtight container.
