Special red cabbage

  • butter
  • 1
    big onion, chopped
  • 1
    cooking apple, cored and diced
  • 2
    small heads of red cabbage, shredded
  • 2
    bay leaves
  • 4
    whole cloves
  • 125
    semi-sweet wine
  • meat stock cube, crumbled OR dissolved
  • 125
    boiling water
  • salt and freshly ground black pepper


Melt a little butter in a heavy-based saucepan. Sauté the onions until soft and translucent. Add the apple and brown. Add the cabbage and stir-fry until glassy. Add the rest of the ingredients, lower the heat and simmer until the cabbage is tender but still crisp. Add salt and pepper to taste. Serve hot. Serves 4-6 people.
