Ingredients (10)

1.00 pears — large, cubed
30.00 ml vinegar — wine
250.00 ml fennel — bulb, sliced
60.00 ml walnuts — toasted, chopped
60.00 ml fresh chillies — 573
15.00 ml fennel — fronds, finely chopped
125.00 g cheese — cubed
sea salt and freshly ground black pepper
250.00 g smoked salmon trout — sliced
watercress

Method:

1. Combine pear (cut into 1,25 cm pieces) and vinegar. Add fennel, walnuts, oil, fennel fronds and cheese cubes. Season with salt and freshly ground black pepper.
2. Arrange a slice of salmon trout on a bed of watercress on four serving plates. Spoon a quarter of the pear mixture on to the centre of each piece of trout. Garnish with fronds of fennel.
Serves 4 as an appetiser
