Sparkling wine sorbet

Time 10 minutes plus freezing time

  • 750
    pink sparkling wine
  • 1
    lemon, the juice
  • 0.50
    egg white


10 minutes
Bring the water to the boil and stir in the sugar to dissolve.
Remove from the heat and add the sparkling wine and lemon juice.
Pour the syrup into a stainless steel dish and place in the freezer until it just starts to freeze.
Whisk with a wire whisk.
Whisk the egg white until stiff and beat into the frozen mixture.
Return to the freezer until it just begins to freeze again.
Beat again to break up the ice crystals.
Repeat a few times to ensure a fine texture.
When ready to serve, place two ice cream scoops of the sorbet in a Martini glass for each guest and serve immediately.
