Ingredients (8)

750.00 ml wine — sparkling
400.00 g sugar
125.00 g cherries
68.00 ml Sheridans gelatine
125.00 ml water — hot
375.00 g mixed berries
125.00 g gooseberries
125.00 g strawberries — hulled and halved

Method:

Pour wine into large pan and add sugar. Bring to boil, drop in cherries and return to simmer. Cover and cook gently for about 5 minutes until cherries soften a little. Overcooking will cause split skins.
Pour mixture into a large bowl and stir in gelatine dissolved in water. Set aside to cool, but not to set.
When cool, add the berries, saving a few for garnish. Stir carefully with a wooden spatula. Oil a large mould, gently ladle in liquid about 3 cm deep and add some of the fruit. Refrigerate until set and then, with care, add remaining liquid and fruit. Refrigerate, covered with plastic wrap, until completely set, preferably overnight.
When ready to serve, uncover and dip bottom of mould briefly into warm water. Unmould, garnish with a few berries and slice.
