Ingredients (6)

50.00 ml sugar
100.00 ml lemon juice
6.00 pears — peeled
500.00 ml fruit juice
750.00 ml wine — dry white
750.00 ml grape juice — sparkling

Method:

Heat the sugar and lemon juice, stirring to dissolve the sugar before the mixture comes to the boil. Simmer until a syrup is formed.
Pour boiling water over the pears and leave for a short while, dry and dice.
Pour the sugar syrup over the pears, add the fruit juice mixture and white wine and chill until needed.
Add the sparkling grape juice just before serving.
Serve with ice and decorate with sprigs of fresh mint.
