Spare ribs in soya and ginger marinade

Ingredients (5)

2.00 kg pork — spare ribs
Marinade: soya sauce
60.00 ml chutney
30.00 ml sherry — medium
4.00 garlic — large cloves, crushed
20.00 ml fresh ginger — peeled and grated

Method:

Oven temperature: 180°C
1. Wipe the spare ribs with a clean
kitchen cloth dipped in vinegar. Cut
into portions and remove excess fat.
Place the ribs in a bowl in which they
can marinate.

2 Prepare the marinade: Mix all the
marinade ingredients and pour the
mixture over the ribs in the bowl. Allow
to marinate for at least half an hour,
preferably longer.

3. Remove the ribs from the marinade,
place in a roasting tin and place in the
preheated oven for 20 minutes. Turn
the ribs and bake them for a further
20 minutes. Remove from the oven and
preheat the grill.

4. Drizzle the marinade over the ribs and
grill until crisp and golden brown. Serve
with baby potatoes or chips.
