Spanish hake

    hake fillets
  • 30
    vegetable oil
  • 1
    onion, sliced
  • 1
    red pepper, cored, seeded and sliced
  • 1
    green pepper, cored, seeded and sliced
  • 2
    cloves garlic, crushed
  • 410
    chopped tomatoes
  • 250
    white wine
  • 3
    Tabasco sauce
  • 1
    bay leaf
  • salt and ground pepper


1. Preheat oven to 180 ºC. Using a sharp knife, skin fish and cut flesh into chunks. 2. In a frying pan, heat oil and fry fish lightly on both sides. Remove and keep warm. 3. Add onion, peppers and garlic and sauté for about 5 minutes until soft. Add tomatoes and wine, bring to the boil and simmer for 5 minutes. Add Tabasco sauce. 4. Layer fish and vegetable sauce in a casserole, ending with sauce. Add bay leaf and seasoning. Cover and bake in oven for 1 hour. 5. Serve hot with crusty rolls and a salad.
